New Head chef

Inooraq Steenholdt started as head chef at Katuaq at the beginning of March. Since his arrival, a clear development in the café’s menu has been noticeable. The ingredients for the new dishes come from local hunters and fishermen.
Among the new dishes he has helped introduce are:

Tuttu Schnitzel

Breaded reindeer with pea purée with mascarpone and horseradish, potatoes tossed in dried angelica, peas, lemon, capers, and horseradish.

Greenlandic seafood

Shell-on shrimp with herb dressing, mussels steamed in white wine, scallops with aioli dressing, pickled fish with onions and capers, dried fish, and seal blubber.

 

Alongside the delicious dishes, there is also suaasat made with either meat or fish.

We look forward to working even more with local ingredients and developing seasonal dishes. The Katuaq Cultural Centre wants to contribute to the preservation, knowledge sharing, and development of Greenlandic food culture.
